a WIAW freak out

This is going to be short and sweet, unlike I had originally planned.

…my roommate and I just realized, 7 days before we have to decide to re-sign our lease, that Tague did the wrong math (kinda humorous, at least LOL) and our rent is actually going up MUCH more than we thought. Needless to say, these little girls are having major anxiety and googling like mad women. Sidenote: Any help is HUGEEELLLYYY welcomed and I promise to give you lots treats in return. Craigslist ain’t cuttin’ it this time.

Breakfast – bagel Wednesday!

Lunch – salad beast with spinach, strawberries, goat cheese, walnuts, and balsalmic dressing.

I actually made my salad early this morning before I saw Gina’s status! woop. great minds think alike ;)

I had it with a couple of these chips I just became obsessed with. UM, one day and the bag is almost gone!?!

Snacks – way too many unpictured starbursts & jolley ranchers, double oops! I actually forgot to eat my banana an hour before the gym because of it. triple oops.

Dinner after a sweaty ab class – a semi-mexican hodge podge; peppers, onions, black beans, corn mushrooms, zucchini, squash, cheese, and TJ’s cilantro dressing.

Dessert – more freak outs and maybe some wine. ;)

what I ate on Wednesday

Gotta love Wednesday, because the week is half way over you get to read about what the beautiful people of the blog world eat thanks to, Jenn! And yep, still going strong with what I actually ate ON Wednesday.

Wednesday is Bagel Wednesday for me (free bagels in the office!), so needless to say, like pretty much every Wednesday for the past 9 months, my day started with a whole wheat bagel. (…yep, that’s a lot of carbs.)

The bagel had some flax seeds, what I believe are sunflower seeds, and another unknown seed.

Please help! ;) I’ve already come up short with no resolution from someone..

I also started my morning with some apple juice because I saw a child with a juice box on the way to the subway and it looked delicious. Yep, I take drink recommendations from children.

so.. I didn’t pack my lunch. :O I got a salad from Just Salad in a reusable bowl (extra toppings, AND green… but can someone wash it for me? :( )

I couldn’t even tell you why I picked what I did, it’s what I hate about creating my own.

Strawberries, blueberries, dried cranberries, radish, cucumber, low-fat aged white cheddar, and almonds with raspberry vinaigrette.

Meh. Why do I choose these things? I can't be trusted on my own..

And then the 3pm antsy oops.

Late afternoon snack to fuel me through a sweaty after-work gym sesh:

For dinner, I looked to this lovely book I got many Christmas’s ago from my sister.

I decided on the Mushroom & Goat Cheese Calzone recipe since I still have some whole wheat dough left in the freezer and nothing else was calling out me. (One for dinner, one for lunch tomorrow.)

Portobellos, button mushroom, red onions, garlic, and pepper that were sauteed in olive oil.

Add some herb goat cheese and thyme on top.

Ta-da! This is where I thought.. “Oh god, can I do this?”

I cannnn!!

But I’ll confirm that when I let you know how they turn out.. :)

PS, just think… next Wednesday may very well be what WE ate! ;)

You make my heeeeeeeeart sing. Okay. Last night I officially discovered the coolest thing ever. Maybe I’m late on this trend but I’ve never seen anything like it and literally went wild.

Pancakes…in a can. Please excuse the residue…things got crazy in the kitchen. I seriously rushed home from the Fresh Market last night and begged Danny to let me make him pancakes. He wasn’t hungry and neither was I, so I made about six of these this morning.

I wish I snapped a picture of the actual cakes, but we didn’t have any syrup, butter, or exciting toppings. I was so excited to eat them that I basically rolled them up plain (I actually prefer pancakes plain) and ate them with my fingers. Mature…and delicious. The brown sugar flavor was AMAZING and aside from the extra sodium the nutrition stats aren’t so ugly. I can get down with 2 grams of fiber in a 90 calorie serving.

And on to other wild things…I’m in the process of de-frat house-izing our home. Danny’s friends have lived in this place for years and it’s pretty obvious. Our room now looks like a grown-up bedroom, the kitchen is A+, and we’re getting brand new couches delivered tomorrow! Once I get rid of all the junk in the living room I’m moving to tackle the back porch.

I’d like to see the legs go (put I’m not holding my breath). Danny did agree to take down the “totally cool” Sublime poster he put up on the back wall of the house.

Who puts posters directly on the outside of a house? Classy.

Time to get back to work! Tomorrow is FRIDAY!

things change!

I’ve found that in this life, things are always changing and almost nothing ever goes as planned. A few funny little reminders (for you & me!) that change isn’t always bad.

I’ve mentioned Bagel Wednesday before, but just as a refresher, on Wednesday’s where I work there are bagels. What I didn’t tell you is – every day there is cereal. Yep, an entire room dedicated to cereal. Almost any kind you could imagine – sugary or healthy. This was extremely exciting the first few months, but how much cereal can a girl eat? While all of you bloggers are eating your protein packed overnight oats, breakfast cookies, and whatever else – I’m here, still eating cereal. I know, I know, this may sound glamorous and fun, but once you’ve tried it all…. sugary (but made with whole grains… ;) ?), healthy, and everything in the middle, you really do want to call it quits; however, you proceed on because well, this city is expensive, and cereal is free.

A few weeks ago, I tried to battle my breakfast woes with bagel thins… three days later, I was done with that and back to cereal. Once you go NY bagel, you never go back.

This week, while at Trader Joe’s, I decided to dig back into my own breakfast funds and give another type of breakfast a good ol’ college try. Enter: frozen whole grain waffles.

Monday & Tuesday I had these with TJ’s honey apple butter and frozen raspberries.

Sososo good. In fact, I had an admirer of my honey apple butter in the kitchen. “but does it taste more like apple, or more like honey?”

Enter: Bagel Wednesday. My usual favorite day of the week. (Next to Friday, Saturday, and Sunday that is.) I’ve gotten obsessed with bagels, ask Jamie – I’m always gushing over them. Well, not today. I looked at my bagel (you have to grab the one you want EARLY – whole wheat everything = hot item.) and all I wanted was my sweet, sweet waffles.

Things really, really do change. (Except I ate it anyway… Duh.)

Changes also come in the form of a meat-loving-veggie-hating-boyfriend who I never thought could turn into even a semi-foodie like those other blog legends I’ve heard.

He even bought some kind of special TJ’s dressing for this said salad. A few months ago, Danny didn’t even know what I was referring to when I said I wanted to go to TJ’s.

Last week, I received a few surprising texts leading to this, too. Pictures of his food, a picture on a menu of some risotto I would like, and best of all:

Now that’s change I’d like to stick around. :D

Last and certainly not least, things do change in the cupcake world, as well. I used to wonder why people would ever stand in a line so long at Baked By Melissa when there are Crumbs around.

And then, it hit me last weekBaked By Melissa cupcakes are tiny. The perfect treat size that you don’t feel guilty about. Now that I’ve tried them, I absolutely cannot wait for the one by my job to open soon. Crumbs and Baked By Melissa are just different.

See, changes can be teeny tiny, too. ;) Any of you experience positive changes lately? It’s nice to have these little reminders that change can actually be a good thing sometimes! Happy hump day! :D

After some late-night grocery shopping yesterday, I was anxious to create a breakfast using two things I was amped to try:

These Toufayan pitas & some goat cheese! (I just had the urge to type a goat noise, then realized that may not be appetizing and also that I have no clue what sound a goat makes.)

(In my quest to kick my aspartame habit, I’m also trying to purchase foods with as few ingredients as possible. For me- healthy eating starts in the grocery store. That’s where I analyze nutrition stats and ingredients, so that when I’m home- I don’t even have to think twice about ‘em.)

I considered a pita filled with cheese alone, but knew that wasn’t the best option…so I microwaved (does anyone else do this?..) an egg and sliced up some avocado for healthy fats.

A winning combo! I was worried it’d be a little dry, but the avocado took care of that! No such thang. Although the pita was tasty, it barely cut open and was virtually un-stuffable! (Every time something like this happens I can’t help but let out a Snooki “WAHH” in my head.)

Oh well! Tasty either way, and time to get to work. I’m hoping to break at lunch time for a run.

(P.S. THANK YOU for all your support in my quest to quit the dreaded diet soda!! Yesterday was rough- I didn’t realize how much diet coke I sip while standing around at the restaurant. I replaced it with water and peed 60 times, in case you were wondering.)
